REFRIGERATOR PICKLES ~ Gnomie Style!

I normally do not like to can or preserve foods, but when I’m motivated enough to try it, I’ll give it a whirl! The thing that motivated me this time?
PICKLES
I LOVE THEM!
Any kind and most any flavor! So when I found myself with some garden fresh cucumbers (that weren’t that great for fresh eating) I decided to try this simple recipe. All it involves is gathering simple ingredients I already had on hand, boiling water (Hey… I can do that!) and pouring it over sliced cukes and jalapenos. Easy! It took about 2 solid weeks for them to really absorb the flavorings but when they were done….HUZZAH! Delicious!
SUPER SIMPLE RECIPE:
- 1 cup water
- 1 cup white vinegar
- 1/2 cup white granulated sugar
- 1 TBL Black Peppercorns
- 2 medium sized pickling cucumbers (about 5-7 inches in length)
- 1 large fresh jalapeno
- Clean Large Mason jar with screw on lid
- Pour first 4 ingredients into a sauce pan – put on high heat – stir occasionally until it comes to a boil and sugar is dissolved.
- Evenly slice cucumbers – discarding ends and wonky pieces. Do the same with the jalapeno.
- Layer cukes and jalapeno’s into a large mason jar – leaving about 1 inch at the top clear
- Once the liquid ingredients are cool enough to handle safely – pour over the cukes/peppers until all are fully submerged in the liquid. Put lid on and store in refrigerator for a week or more.
- Check every few days to make sure the veggies stay submerged. Test tasting is allowed!
